Christmas Meringue Boxes
Light, crisp and perfectly festive - these meringue gift boxes make the sweetest homemade treat. Wrap them up, tie them with ribbon and spread a little Christmas joy.
Makes 3 boxes. 6 per box, 18 in total.

Ingredients:
- 3 x 8-pack meringue nests
- 600ml thickened cream
- 2 tbsp icing sugar, plus extra for dusting
- 1 punnet raspberries
- 1 punnet blueberries
- 1 mango, thinly sliced
- 1 lime, cut into small wedges
- A few fresh mint leaves
- Boxes for packing/gifting
Method:
- In a large bowl, beat the thickened cream with 1 tbsp icing sugar until soft peaks form.
- Arrange the meringue nests on a flat tray.
- Spoon or pipe cream into 6 nests, then top each with 1 raspberry and 3 blueberries. Dust with icing sugar.
- Add cream to the next 6 nests, top with mango slices, a small lime wedge, and icing sugar.
- For the last 6, add cream, a few blueberries, a mint leaf, and a dusting of icing sugar.
- Mix and match 6 assorted mini pavs per box for a sweet homemade gift.
Storage Tip for Gifting:
Keep the meringues and whipped cream separate until just before gifting. Assemble within 2 hours of serving for the best crunch. If pre-assembled, store in the fridge (uncovered) for up to 4 hours to prevent softening.
