Healthy Sweet Potato Nachos

Enjoy this healthy alternative nachos recipe for under $5 per serve.
Ingredients 
- 600g sweet potato (2 x medium size)
 - 2 tbsp olive oil
 - ½ red onion
 - 500g beef mince
 - 1 can crushed tomatoes
 - 1 sachet taco spice mix
 - ½ cup grated cheese
 - ½ an avocado (cut into cubes)
 - 4 tbsp Greek yoghurt
 - 4 tbsp salsa
 
Method
- Preheat the oven to 180 degrees Celsius
 - Finely slice the sweet potato into 0.5cm disks. Marinate with the olive oil and ¼ of the taco sachet. Evenly spread the sweet potato across a lined baking tray and bake for 30 minutes or until sweet potato is crispy
 - Meanwhile add the onion, mince, taco spice and crushed tomatoes to a pan. Cook for 15 minutes or until mince is browned.
 - Assemble the nachos with the sweet potato chips, mince, cheese, avocado, Greek yoghurt and salsa
